Is my original video modified?

No. A new file is produced and the original stays as it is until you choose to replace it yourself.

Why does the louder audio sound distorted?

Past a certain point the signal can no longer be represented cleanly and gets clipped. Choose a smaller increase.

Can I remove the audio entirely?

Yes, by setting the volume to zero. The picture is unaffected.
